I love how they are elegant enough to serve at a wedding, yet childlike enough to serve at a 4th birthday party. These orange cream cupcakes are nothing but scrumptious. Orange Creamsicle Cupcake Recipe
Ingredients:
2 ½ cups flour 1 ½ teaspoon baking powder ½ teaspoon kosher salt ½ teaspoon baking soda 2 tsp orange zest 1 cup buttermilk ¼ cup orange juice 3 tablespoons orange juice concentrate 2 cups sugar ¾ cup butter, softened 3 eggs 2 teaspoons vanilla extract
Directions: Preheat oven to 350º. Line 18 muffin cups with paper liners or spray pan with non-stick cooking spray. Combine flour, baking powder, baking soda, salt and orange zest in a bowl and set aside. In a separate bowl cream the butter and sugar on medium speed until fluffy and light. Beat eggs, vanilla and orange juice concentrate into the mixture. On low speed mix in flour mixture from other bowl. Then slowly add buttermilk and orange juice. Fill cupcake liners / muffin cups ¾ full with batter. Bake 18 minutes or until golden. Cool completely and frost. Makes 18 cupcakes.
Orange Cream Cheese Frosting Recipe
Ingredients:
1 (4oz) package cream cheese, softened ¼ cup butter, softened 2 ¼ cups icing sugar 1 teaspoon orange zest 1 tablespoon orange juice concentrate ½ teaspoon vanilla extract
Directions: Combine cream cheese and butter on medium speed until well combined. Add orange juice concentrate, orange zest, vanilla and icing sugar and mix on low speed. Once almost blended switch mixer to medium speed and blend until smooth. Spread frosting on cupcakes with a knife or pipe on with a pastry bag. Enjoy!
