Delicious and Easy Banana Cream Whoopie Pie Recipe

Yields 35 mini whoopie pies. Ingredients: 1/2 teaspoon salt 1/2 teaspoon baking powder 1/2 teaspoon baking soda 2 cups flour 1/2 cup granulated sugar 1/2 cup brown sugar 1/2 cup mashed banana 1/4 cup (1 stick) unsalted softened butter 1 egg 1 teaspoon vanilla extract 1/2 cup sour cream 16 ounces softened cream cheese 1 1/4 cups powdered sugar Instructions: Preheat oven to 350 degrees F. Spray Whoopie Pie Pan (available here) with baking oil. Mix flour, baking powder, baking soda and salt in a bowl. Combine banana and sour cream in separate bowl. Beat butter and brown sugar until creamy, about 3 1/2 minutes. Add egg and 1/2 teaspoon vanilla, beating until mixed well. Combine egg mixture, banana mixture and flour mixture in one bowl and beat until well mixed. Spoon batter into Whoopie Pie Pan available in Kara’s Party Shop HERE. Or, transfer batter to a pastry bag and pipe batter into 1 1/4 inch round circles on a greased baking sheet. Bake for about 12 minutes, or until light-golden. Cool on wire rack. Beat cream cheese, 1 cup powdered sugar, and remaining 1/2 teaspoon vanilla with a mixer until smooth (about 3 minutes). Spoon 1 tablespoon cream cheese mixture onto the flat sides of half of the cookies and take the remaining cookies and place on top, creating a sandwich. Roll the edges of the pies into sprinkles if desired. Dust with remaining 1/4 cup powdered sugar and serve.
